Hilmar Cheese Company was established in 1984 by a group of California dairy farmers who selected Jersey cows for their high‑protein milk, which is well suited for cheese production. The tour includes a Cheese Theatre where visitors observe the conversion of fresh milk into Cheddar and Monterey Jack, as well as interactive displays that cover dairy agriculture, cheesemaking processes, and modern equipment such as large barrels and cheese blocks. Attendees can also engage with a miniature mixer wagon and meet a farm animal mascot while learning about the industry’s technical aspects.
